2025 Anticipated Restaurants Openings in San Diego

2025 is quickly approaching with an array of new and buzzworthy restaurant openings spanning from San Diego, north through San Luis Obispo. From innovative concepts by celebrated local chefs to new ventures promising to excite the culinary landscape, next year is shaping up to be a foodie’s dream. Below is a sneak peek at some of the most anticipated spots, each with its own story and flavor profile ready to shake up the 2025 culinary scene.

Le Horse at The Lafayette Hotel (North Park, San Diego, CA) // Summer 2025

Slated for 2025, Le Horse is a luxurious European-style restaurant that will pay homage to early 20th century hotel fine dining, pioneered by Escoffier and Cesar Ritz focusing on prime rib, ice cold martinis and table service carts. Situated just off the grand lobby of The Lafayette Hotel, Le Horse is designed with lavish details such as mosaic tiles, plush upholstery, and ornate custom light fixtures. The entrance is complete with a conservatory and a central bar and café style banquettes that flank both sides of the space.

The Crack Shack (Pacific Beach, San Diego, CA) // Winter 2025

Brought to life by the original dream team behind nationally-acclaimed Juniper & Ivy, the Crack Shack was hatched in November 2015 with the goal of bringing quality, non GMO ingredients and high-end culinary focus to a fast casual, outdoor setting. In early 2025, The Crack Shack will expand into another iconic San Diego neighborhood with the opening of their fifth location in Pacific Beach. Known for creating laidback and welcoming dining experiences, the PB “coop” will offer lawn games, a large-format video wall, and a thoughtful menu providing a fun and social setting. In addition to comfortable accommodations for guests dining in, The Crack Shack offers convenient take-out options ideal for on-the-go eating or outdoor picnics. The menu at the new Pacific Beach location will be similar to other outposts with rotating specials and location-specific promotions. Diners can expect the same iconic crispy chicken, mouthwatering signature sandwiches, hearty salads and grain bowls as well as luxury milkshakes and fresh baked cookies.

Stella Jean's Ice Cream + Pop Pie Co. (South Park, San Diego, CA) // Winter 2025

Opening in February 2025 from The Sweet & Savory Collective, a hospitality group based out of San Diego, all-day pie shop Pop Pie Co., and small-batch ice cream shop Stella Jean’s Ice Cream, will open side by side in San Diego’s South Park neighborhood. Proudly led by Steven Torres and the self-proclaimed “Thai Pie Guy” Gan Suebsarakham, business partners and husbands for nearly a decade. Pop Pie Co. is known for Executive Chef Gan Suebsarakham’s celebrated all-butter crust, filled with sweet and savory globally inspired ingredients, with influences from Australia, Asia and Europe. Locally loved and nationally acclaimed Stella Jean’s Ice Cream uses real, locally sourced ingredients, and wildly creative flavors inviting everyone to savor new tastes from various corners of the globe. There are currently 4 locations across San Diego and one in Costa Mesa, California.

The Baby Grand Hotel Restaurants (Coronado, San Diego, CA) // Winter 2025

In winter of 2025, CH Projects will introduce its second hotel renovation, The Baby Grand in Coronado, CA. Situated across from the iconic Hotel Del Coronado in the town center on Orange Avenue, the hotel will be the first design hotel of its kind in two decades in the popular Southern California destination. The $17 million project by award-winning Brooklyn design firm Post Company will feature 31 rooms and three new restaurant concepts: Fallen Empire, a champagne, oyster and caviar bar, an omakase venue and a yet-to-be-announced  bar and dining outlet in the 6,000 square foot al fresco entryway. The design will thematically reference the area’s coastal setting paired with CH Projects’ signature maximalism, striving to progress the social landscape of San Diego’s distinctive neighborhoods and cultures.

La Condesa at Petit Soleil (SLO, CA) // March 2025

The Santa Barbara-based hospitality group, Good Lion Hospitality, is excited to expand their portfolio of celebrated Santa Barbara and Ventura bars (The Good Lion, Shaker Mill, Test Pilot, Strange Beast, Lion’s Tale, Jaguar Moon and Bank of Italy Cocktail Trust) with their newest project, La Condesa at Petit Soleil, a boutique bed, breakfast and beverage property in the heart of San Luis Obispo. Opening in March 2025, the husband and wife team's latest concept, La Condesa, is a restaurant and Tequila bar located next the hotel in collaboration with Michelin Bib Gourmand chef Ramon Velasquez (Corazon, Corazon Comedor, Little Heart Cafecito, Alma). Channeling the cosmopolitan feel of Mexico City, La Condesa will offer a range of spirits and elevated bites.

Odie’s Pizza Co. (Oceanside, CA) // Winter 2025

North County natives and childhood friends Odie O’Connor, Clayton Wheeler, and Craig Applegate are bringing New York and Sicilian-style pizzas to downtown Oceanside with the opening of Odie’s Pizza Co in early 2025. Odie’s specialty sourdough crust undergoes a 48 hour fermentation process and will be available as a gluten free option as well. The all day family-friendly restaurant will also offer a selection of vegan pies, salads, housemade desserts, as well as beer and wine.

Madi Pacific Beach // Summer 2025

In 2025, partner and operators Jeff Fink and Matt Sieve will have a busy year, with five restaurants under their belt by the end of the year, including Madison on Park, Sonny’s in University Heights (a pizza spot with natural wine and amaro), a yet-to-be named diner concept in Hillcrest, Madi in Normal Heights and a second location of their popular for all-day brunch spot, Madi in Pacific Beach. Diners can expect the same vibrant and cool interior and a menu that playfully combines California cuisine with a Mediterranean twist and diner favorites. Menu highlights will include Madi Faves like Waffle Churro Sticks, Chilaquiles Verdes, Surfer Burrito and White Bean Shakshuka; Sieve’s grandmother's 70-year old pancake recipe with iterations like Orange Cinnamon Roll and Blackberry and Goat Cheese; and diner-style items including Madi’s Oklahoma Onion Smash Burger, Chicken Fried Steak & Eggs and white bread sandwiches including an Egg Salad Sandwich, Hot Ham & Swiss and a BLT. Additional lunch options include BYOB (Build Your Own Bowl), Country Club Sandwich, Pozole Soup and a variety of salads.

Cherryfish (Pacific Beach, San Diego, CA) // Winter 2025

This winter, the team behind downtown San Diego’s nightlife hub Parq and the playful beachside breakfast joint Palmy’s will bring a new Asian fusion restaurant to Pacific Beach. Cherryfish will occupy the building next door to Palmy’s in a chic Japanese-inspired atmosphere. Most artwork features large, painterly brushstrokes, upholding the element of PB fun but with a little more razzle-dazzle. In addition to the main dining room, adorned with lush greenery, pops of pink and modern artwork, the restaurant will have an exclusive private dining space beside the kitchen, with room for parties up to 12 guests as well as a private entrance for the ultimate VIP experience. As the demographic of the Pacific Beach community continues to change, the Cherryfish team is excited to provide a new destination for locals to enjoy top notch seafood in a luxurious setting, just steps from the beach.

Sonny’s (University Heights, San Diego, CA) // Winter 2025

The team behind Madison on Park and Madi (Jeff Fink and Matthew Sieve) will open their third concept, Sonny's, in March, located around the corner from Madison in University Heights. Sonny's, a wood-fired pizza and amaro bar, is a collaboration with Cucina Migrante, known for their chef-led cooking classes, culinary experiences and team-building dinners from Sicilian chef Francesco Bonsinetto and partner Adisa Ziric. Mario Cassineri, who developed the original menu and culinary team at  Madison, will also consult. Designed by husband and wife duo Anna and David Sindelar of Archisects (the team behind Madison on Park and Madi), Sonny’s pays homage to the iconic NY-style pizzerias of the 80s. Housed in a century-old former auto shop, the space preserves its raw, authentic charm, enhanced with a custom pizza oven imported from Italy and a mezzanine inspired by the cozy atmospheres of all our grandmothers' homes. The bar area is an unapologetic nod to the nostalgia of a grittier era, featuring vintage TVs and a repurposed copper bar, and open to the backyard dining area, Sonny’s already has the feel of a beloved neighborhood haunt.

Yet-to-be named diner concept (Hillcrest, San Diego, CA // Summer 2025

For Jeffrey Fink and Matt Sieve, what started in 2016 with Madison on Park, the beloved neighborhood spot for laid-back dining, live jazz and a killer cocktail program, has grown to include 5 restaurant concepts by 2025 with the addition of their yet-to-be named diner-centric restaurant in Hillcrest. Additional restaurants include Sonny’s, Madi Normal Height, Madi Pacific Beach. With this new concept, Sieve, who is the third-generation of a Minnesota restaurant family, will bring back the nostalgic elements of his family’s 100-year old breakfast restaurant where he grew up working the griddle alongside his father and brother in a fresh and cool way.

Far Corner (Gaslamp Quarter, San Diego, CA) // Winter 2025

Far Corner will debut in the heart of Downtown San Diego, across from Petco Park. Located in a historic building on the corner of 10th and J, Far Corner will offer the warm hospitality of a friendly neighborhood bar with quality eats made from local ingredients and housemade dough. Open daily 11am to 1am for pregame drinks, family dinners and late night snacks, Far Corner aims to represent the spirit of the city and become downtown San Diego’s true home slice. The venue will feature three distinct areas: the dynamic Main Room with roll-up doors, rustic wood tables, a corner DJ booth and a custom pool table; the Dining Room with a bar, an oversized pizza oven and comfortable banquettes for a relaxed, family-friendly dining experience; and the luxurious Lounge, situated in the center of the restaurant offering tufted leather seating and low cocktail tables illuminated by elegant bottled glass lighting. The menu at Far Corner will feature a selection of 15 inch shareable pizzas—some traditional and others more inventive—made with housemade dough that has undergone a 48 hour rising process and is topped with freshly grated cheese and locally-sourced ingredients. Flatbreads, calzones, and ‘build your own pizza’ will also be available, along with the option of gluten-free crust. Fresh, filling salads and small bar bites round out Far Corner’s all day and late night offerings. The bar program will include a list of signature Far Corner cocktails, local draft beers and wine.
